Zadar is the capital of the entire Dalmatian Region. With the Adriatic Sea as a source of fresh seafood, fertile soils nearby providing a bounty of produce and local farms producing award-winning cheeses, you'll soon discover the delicious cuisine of Dalmatia.

This memorable day begins at a local cafe, housed in a former early-Romanesque church. With architectural remnants visible, you and your guide will get to know one another over a steaming cup of coffee. Take this time to discuss your culinary preferences and expectations for the meal.

A typical menu consists of mussels buzara, squid filled with prosciutto and vegetables and a traditional dessert of fritule (Croatian fritters). However, your guide will be happy to design the day's fare to your liking.

With the menu decided upon, your guide will provide a short tour of the city center as you make your way to the wonderful Zadar Market, located in what was once the center of religious life.

Here you will find everything you need to create a most memorable meal. As you browse the selections of fish and seafood, eggs, meats and cheeses and fruits and vegetables (including olives, figs and cherries), you will find the freshest ingredients just waiting to be turned into a traditional Dalmation dish. And to be certain you've made the right choices, you'll get to sample each item before making your final decision.

At this point your guide will escort you to the location of the cooking portion of the tour. From here, the chef takes over, providing guidance and expert advice. It's time to get down to business so let the chopping, slicing and dicing commence. A little frying, a little baking, a little stirring and soon enticing aromas of Mediterranean herbs and spices fill the room. Before you know it, it will be time to enjoy the results of your culinary adventure.

Take a seat and raise a glass to toast the farmers and fishermen who have provided the delicious ingredients and to the chef who provided direction for your authentic Dalmatian feast.
